5-INGREDIENT PROTEIN PANCAKE RECIPE

What you’ll need:


2 scoops (20g) of vanilla protein powder (we used Evolve 3-Whey Protein)

1 large very ripe banana

⅛ tsp cinnamon

¼ tsp baking powder

2 large eggs


Method:

  1. In two clean bowls, crack your eggs and separate the egg whites from the egg yolks. It’s important that no yolk gets into the egg whites.

  2. Beat the egg whites on high for 2 minutes until they form soft peaks. (Soft peaks are defined as barely holding their shape. The peaks flop over immediately when the beaters are lifted).

  3. Add egg yolks, along with the banana, cinnamon, baking powder and protein powder, into a large bowl and beat until smooth.

  4. Gently fold 1/4 of the egg white mixture into the banana mixture until roughly combined. Fold half of the remaining egg whites into the mixture, and finally, add the last portion of the egg white mixture and mix until everything is well combined.

  5. Heat frypan over low heat. Scoop 1/2 a cup of the mixture into the frypan and cook for 60-90 seconds on each side.

  6. Serve straight away and enjoy with your favourite toppings!
